finally a new 5k pr!

it seems i've started a cookie-of-the-month in the ctk kitchen. i bought a 2lb container of oats awhile ago and what better way to (slowly) use them up than baking cookies. josh was away on a work trip for most of the month and his apples were begging to be baked. i can't eat raw apples because the protein is similar to birch pollen and makes my throat itchy (oral allergy syndrome). cooking changes those proteins so i can eat apple goods comfortably. in other words, apple pie = healthy.

anyway. this time i made apple oatmeal cookies. i subbed the shortening with canola oil and diced two apples (instead of just 1c). mine came out flat, i think my baking powder is past it's prime. flat just means less calories, right?


a legally blind south carolina woman won the flying pig marathon this weekend. pretty cool.

  1. That's so awesome about the lady from SC who is blind winning that marathon! I didn't know about that but I'm not surprised, the news here never covers anything positive (guess there's not too much good coming from our state normally, anyway).

    Those cookies look great... we really like apples, too. I might have to make those one day.

  3. I like that story about the South Carolinian winning the marathon! And those cookies look delicious. I bet they would be good with vanilla ice cream.

  4. Did you ever hear of Marla Runyan? She was an awesome legally blind runner? I ran a race with her once. I had just read her autobiography and I was starstruck.

    oat cookies are my favvvvvvv. send some my way? maybe, since i don't bake, like, at all anymore, it'll help me with a certain fingers crossed situation? hahah!

  8. Weirdly, I have OAS only when I eat pears (raw obviously) or I run outdoors in the spring. I am obviously consuming some kind of pollen when I run...I get swollen and itchy lips and mouth from either.
    I love baking with apples and I will bookmark that recipe for this fall when all the apples are cheap!

    I've never heard of that OAS. Definitely does not sound like much fun. Is it only apples you cant' eat? Or are there other fruits too?

  12. Cookies are cookies! Flat, raw, healthy-who cares! They should be eaten EVERY day for at least a month after a big 5K PR!! That was my theory anyways and now I've had to cut out sugar completely to make up for it......

  19. I'm all for cookies all the time!
    Having butter too liquid makes cookies flat (in recipes that use butter) so using oil instead of shortening is probably the reason. But I'm sure they were still yummy!

  20. when cookies come out flat you just take a cutter that is circular and make rounds (eat the stuff you cut off) and then put a tablespoon or two of ice cream on one side. Top with another and into the freezer for a few minutes and you have ice cream sandwiches.

  22. What a delicious use for apples and oats! I'll echo everyone else's comments that 1) it was likely a butter-temperature issue, and 2) they were likely awesome, fat or flat. Thanks for sharing the recipe!

    I love it! It's a great way to use up old bananas too. When I make it, I sub out half the flour for whole wheat, although that's not necessary.
